Cauliflower Crust Pizza

In an effort to eat better, my wife asked me to make cauliflower crust pizza. I was reluctant at first, as I, like the rest of my family, am a “pizza snob.”  Well, I was pleasantly surprised. Although I still prefer “real” pizza, this was surprisingly good!  (And, as I noted in the pizza sauce post, it is low in calories, and it is gluten-free!) So, if you’re looking for a healthier alternative to traditional pizza, give this recipe a try.  I think you, too, will be amazed.

Ingredients

Crust

1 small to medium sized head of cauliflower
1/4 teaspoon kosher salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup shredded Parmagiano Reggiano cheese
1/4 cup mozzarella cheese
1 egg

Toppings

2 cups pizza sauce
2 cups mozzarella cheese

Instructions

Place a pizza stone, or baking sheet if you don’t have a pizza stone, in the oven. Preheat oven to the maximum temperature your oven reaches.  Once it reaches that temperature, heat stone for at least 30 minutes, but preferably 60 minutes. (Note: The baking sheet can be heated for 15 minutes.)

On a pizza peel, cutting board, or the backside of a baking sheet, place a large piece of parchment paper and spray it with nonstick cooking oil.

Wash and thoroughly dry a head of cauliflower.

Cut off the florets and add half to your food processor.

Pulse in your food processor until you get powdery snow-like cauliflower, about 30 seconds.

Empty processed cauliflower into medium microwave-safe bowl and repeat with second batch of florets.  You should end up with 2 to 3 cups of cauliflower.

Microwave cauliflower for 7 minutes. Dump cooked cauliflower onto a clean tea towel and allow to cool for 10 minutes.

Once cauliflower is cool enough to handle, wrap it in the towel and squeeze out as much water as you can. Put the cauliflower back into a bowl.

Add the Parmesan cheese, mozzarella cheese, kosher salt, dried oregano (crush the oregano in your fingers before adding), granulated garlic, and cayenne pepper.

Mix ingredients together until combined.  When the cauliflower mixture is room temperature or only slightly warm, add the egg and mix thoroughly.

Form the dough into a crust on your oiled parchment paper.  Pat the dough firmly, making sure there are no cracks in the crust.

Slide the crust, with parchment paper onto your hot pizza stone or baking sheet in the oven. Reduce the oven temperature to 450 degrees.

IMG_1350Bake until edges of crust are golden brown and there are golden-brown spots throughout the crust, about 10-13 minutes.

Remove from oven. Add sauce, 2 cups mozzarella cheese, and whatever other toppings you like.  (Note: Since the crust is par baked and you return the pizza to the oven only to melt the cheese, you must choose your toppings wisely, i.e., this is not enough time to cook raw sausage.)

Slide pizza, which should be on top of parchment, back in the hot oven and cook until cheese is melted, bubbly, and slightly golden, about 5 to 7 minutes.

Allow the pizza to cool for 2-5 minutes.  Cut and serve using a spatula.
