Easy Peppermint Bark

My wife and I started making this easy peppermint bark recipe several years before you could find it in every store.  Our version requires minimal clean up and takes about ten minutes to make once you get the ingredients out.

Ingredients

Peppermint Bark Ingredients

1 (11.5 ounces) package milk chocolate baking chips

1 (12 ounces) package white chocolate baking chips

4 teaspoons vegetable oil

1/2 teaspoon peppermint extract

Crushed peppermint candy

Directions

Cut a large rectangle of parchment paper. Set aside.

Put the package of milk chocolate baking chips in a microwave-safe glass bowl.  Put 2 teaspoons of vegetable oil in the container with the milk chocolate baking chips and stir.

Put bowl in microwave and microwave on high for 50 seconds. Take bowl out of microwave and stir.

Put bowl back in microwave and microwave for 50 more seconds. Take bowl out and stir.  (If the chocolate is not completely melted, put back in microwave, and microwave in 10-second increments until melted.  I usually microwave mixture for a total of 2 minutes.)

Once chocolate is melted, put 1/2 of a teaspoon of peppermint extract in and stir. Pour and spread the melted chocolate out on parchment paper.

Take a clean microwave-safe glass bowl and put the white chocolate baking chips in it.

Put 2 teaspoons of vegetable oil in the bowl with the white chocolate baking chips and stir. Repeat melting process you used for the milk chocolate baking chips.

Once the white chocolate baking chips are melted, pour mixture over the melted milk chocolate and spread it over the milk chocolate.

Sprinkle crushed peppermint candy on top.

Refrigerate to set.

Once the bark is set, break into pieces.
