Hot Chili Con Queso Dip

This is a great hot chili con queso dip to make year-round.  Serve with your favorite chips.

I use a small Crockpot for this recipe.

What is great about it is I can make this recipe using only one pot, and I can use the Crockpot to keep the queso hot. If you don’t have a Crockpot, you can either prepare and set out when your guests arrive, or you can make it ahead and reheat it in the microwave. Also, if it gets too cool, pop it in the microwave to reheat (stir after you remove from the microwave).

Ingredients

1 (8 ounce) package processed American cheese, cubed
1 (8 ounce) package mild Cheddar cheese, cubed
1 (7 ounce) can chunky salsa, hot
1 1/2 cups canned chili with no beans, hot (e.g., Hormel)
1 (8 ounce) container sour cream
1 teaspoon chili powder
1 teaspoon hot pepper sauce (e.g., Tabasco)

Instructions

Melt the American and Cheddar cheeses in the microwave. To do this, set the microwave for 1 minute at 50% power. After 1 minute, take out and stir. Repeat until all the cheese is melted.
Mix in salsa, chili, sour cream, chili powder, and hot pepper sauce. Set microwave for 1 minute at full power. Cover container. After 1 minute, take out and stir. Repeat until mixture is thoroughly mixed and hot.
Serve warm with chips.
