Super Easy Microwave Oven Peanut Brittle

With this recipe, you can quickly make a great peanut brittle in one container. I have made this recipe for over 15 years, and everyone who finds out it was done in the microwave wants the recipe. I have also done this recipe with other nuts. Cashews work really well. Deluxe mixed nuts work well too (I remove the Brazil nuts but that is due to my personal hatred of them). Pistachios did not turn out very well (their mild flavor was drowned out).  Note: This recipe was done using a 1000W microwave, so YMMV.

Lesson Learned: Do not double the recipe.  It will not cook correctly.  Just make separate batches.

Ingredients

Peanut Brittle Ingredients

1 1/2 cups dry roasted peanuts

1 cup white sugar

1/2 cup light corn syrup

1 tablespoon butter

1 teaspoon vanilla extract

1 teaspoon baking soda

Directions

Line a baking sheet with parchment paper.  (If you don’t have parchment paper, lightly grease the baking sheet.) Set aside.

In a microwave-safe glass or Pyrex bowl–do not use plastic, combine peanuts, sugar, corn syrup, and salt.  Stir the ingredients to combine.

Microwave for 7 minutes. Stir in butter and vanilla until butter is melted.

Note: every time you take the mixture out of the microwave while making this recipe, it will be extremely hot, so be careful. Microwave 3 minutes longer. Stir in baking soda.

Baking Soda for Peanut Brittle

Stir just until mixture is foamy.

Pour immediately onto prepared pan.  Spread mixture out as best you can.

Let cool at least 15 minutes, or until set. Break into pieces and store in an airtight container.
