Texas Caviar

Do you typically have guacamole and/or salsa with chips at your get togethers? Next time, try Texas Caviar. We tried this recipe twice recently, and our guests devoured it!

It may sound strange to add bottled Italian dressing to this dip, but trust me, you will be amazed! I like to serve this with a thicker tortilla chip. My favorite brand is El Ranchero, but it is made in Chicago and probably only available in the area.

Ingredients

1/2 red onion, chopped
1 green bell pepper, chopped
4 scallions, chopped
2 jalapeno peppers, chopped
1 tablespoon minced garlic
1/2 cup zesty Italian dressing (e.g., Ken’s Steakhouse Zesty Italian)
1 (15 ounce) can black beans, drained and rinsed in cold water
1 (15 ounce) can black-eyed peas, drained and rinsed in cold water
1/2 teaspoon ground coriander
You will also need to add 2 tablespoons of cilantro to the dish right before serving (see below)

Instructions

Mix all ingredients together in a bowl, refrigerate (covered), for at least 2 hours.
Before serving, mix all ingredients again and sprinkle 2 tablespoons of chopped cilantro on top.
